Apple Cinnamon Ebelskivers

4-6 servings


2 apples, Honeycrisp or Granny Smith work well

Cinnamon

Brown sugar
3 eggs, separated

2 cups half & half

2 teaspoons sugar

1/2 teaspoon salt

1 teaspoon vanilla

2 cups all purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

Melted butter



Skin, core and finely chop the apples,

Place them in a sauce pan with cinnamon and brown sugar, the amount is up to you. I use about 1 teaspoon cinnamon and 2 tablespoons sugar depending on the apple variety. You may also need a small amount of water. Cook them until they are tender but not mushy.

In a large bowl, whisk together the egg yolks, half & half, sugar, salt and vanilla.

In a separate bowl, combine the remaining dry ingredients.

Beat the flour mixture into the egg mixture until smooth and most of the lumps are gone.

With an electric mixer, whip the egg whites until stiff peaks form, fold them into the batter mixture.

Heat your ebelskiver pan and brush with melted butter. Fill each whole about 1/2 full with batter, spoon a little of the cooked apples into the center of each, then cover the apple with a small amount of batter. When the bottoms are brown flip them using a wooden skewer. Continue cooking until brown on the flip side. Repeat.

Serve with powdered sugar or the syrup of your choice.
