Pecan Bonbon Brownies

Yield 9-12


2/3 cup all purpose flour

1/4 cup cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup sugar, plus 1/4 cup

1/2 cup shortening

2 eggs, one white separated into a clean bowl

1 teaspoon vanilla

1/2 cup chopped pecans, divided

1/4 teaspoon cream of tarter



Preheat oven to 350 degrees.

Grease an 8x8x2 inch baking dish.

Sift together the flour, cocoa, baking powder and salt. Set aside.

In the bowl of an electric mixer, cream together 3/4 cup sugar and the shortening.

Add the whole egg, one egg yolk and vanilla. Beat well.

Add the dry ingredients and 1/4 cup of the pecans. Mix well.

Spread batter in to the prepared pan.

With a whisk or electric mixer, beat the remaining egg white with the cream of tartar until foamy. Slowly add 1/4 sugar and continue whisking until stiff peaks form. Fold in the remaining 1/4 cup pecans.

Spread the pecan meringue over the brownie batter.

Bake for 30-35 minutes.

Allow to cool before cutting.
